Pipe Dream

In Denver, which sits at over 5,000 feet above sea level, we have to be especially considerate for folks who aren’t used to drinking alcohol at altitude. Here, Dave Anderson makes a creamy, verdant cocktail that resembles the Warp Pipes in the Super Mario Bros. games (hence the name). You don’t have to purchase kiwi purée to make this NA cocktail; simply peel and blend a kiwi until smooth. 

2 ounces cold seltzer
1 ounce Perfect Purée kiwi purée
1 ounce Vanilla Syrup (see Note)
¾ ounce Coco López cream of coconut
¾ ounce fresh lime juice
Garnish: 1 brandied cherry on a skewer

Pour the seltzer into a chilled Collins or fizz glass. Short shake the remaining ingredients with ice for about 5 seconds, then double strain into the glass over the seltzer. Garnish with the brandied cherry.

Note: To make Vanilla Syrup, combine 250 grams simple syrup with 1 gram pure vanilla extract.
