Vigilante

“I wanted to build a Manhattan-style cocktail that leaned less into spice and deep flavors and more into high-toned and floral notes. Apple and douglas fir are a great pair and the softness of the Wild Turkey Rye allows those parts to drive the flavor profile while remaining true to the idea of a Manhattan. The Vigilante also makes an excellent Freezer Bar cocktail.” —TB

1½ ounces Wild Turkey rye
1 ounce Noilly Prat Ambré sweet vermouth
½ ounce Cyril Zangs 00 apple eau-de-vie
¼ ounce Clear Creek Douglas Fir eau-de-vie|
1 teaspoon Demerara Syrup (see Note)
1 dash Angostura bitters
Garnish: 1 apple fan

Stir all the ingredients with ice, then strain into a chilled Nick & Nora glass. Garnish with the apple fan.

Note: To make Demerara Syrup, combine 2 parts demerara sugar and 1 part water in a sauce pan and cook over medium heat, stirring constantly, until the sugar has dissolved. Transfer to a storage container and refrigerate until ready to use, up to 2 months.
